1 cup baby arugula
1 cup baby kale
1/2 cup whole mint leaves
1 1/2 cup of seedless watermelon
1/3 cup of olive oil
1 lemon (squeeze lemon juice out)
1 teaspoon himalayan salt
1/2 teaspoon freshly ground black pepper
1/3 cup of feta cheese ( can substitute with parmesan cheese)
In a small bowl mix olive oil, lemon, salt, and pepper. Pour mixture over arugula, kale, and mint leaves. Toss. Place watermelon on salad and season with the feta.
